Smoked Jalapeno Mac & Cheese
SMOKED JALAPEÑO POPPER MAC & CHEESE
12 Oz Mac partially cooked & drained
8 Oz Smoked Gouda
8 Oz Smoked Guyere
8 Oz Extreme Jalapeño
1 Cup Milnot
1 cup 1/2 & 1/2
2 Jalapeños ,diced
4-6 sliced cooked bacon, diced
1/4 Butter
1/4 cup Flour
1/2 Tsp Salt ( or more to taste)
1 Tsp Pepper
1/2 to 1 tsp smoked pepper(ask OkieSpice)
1 tsp dry mustard
Slice extra jalapeños ?
Cook macaroni al dente. Melt butter and stir in flour into large sauce pot. Continue stirring and add dry spices. Stir and cook for 4 minutes. Add liquid milks…. , stirring or whisking constantly over low heat. When bubbling add all cheese, diced jalapeños and chopped bacon. Reserve 1/2 cup cheese mixture. When cheese is melted, add cooked and drained macaroni. If too dry, add another 1/2 cup or so of 1/2 & 1/2. Keep it juicy. Place in 12 inch cast iron top with reserved cheese, sliced jalapeños……cover and smoke at 225 degrees. Remove cover after 20 minutes and continue smoking another 10 minutes or so. It’s fabulous.
