Cold Rainy Days
On cold rainy days....this is a great way to get your Taco Tuesday fix......anytime! OkieSpice has THE best taco seasoning and this soup is a perfect way to highlight the flavor and dress up plain ol hamburger meat! (Use ground turkey if you want.....make it healthy! ) Although it’s really not that terrible......I mean you’re getting a lot of good stuff like beans, corn and SALSA! (Plus it gives us the excuse to get out the cast iron!)
Our absolute favorite way to cook anything......start this on the stove, then pop it in the oven on about 300 degrees for an hour or two.....it doesn’t need that long to finish if you need a quick dinner idea but it gives us time to do other things without babysitting the pot! Then when you’re ready to eat.....it’s all mingled together and ready for that awesome topping of OkieSpice Cheese!
TACO SOUP
- 2 1/2 # Gr Chuck, cooked and drained
- 1/2 cup OkieSpice Taco Seasoning
- 1 can Fire Roasted Corn
- 1 can Fire Roasted Tomatoes
- 1 jar OkieSpice Chile Rellano Salsa
- 1 can Dark Red Kidney Chili Beans
- 1 can Ranch Style Beans
- 1/2 pkg OkieSpice Guacamole Seasoning
- 1 pkg Ranch Seasoning
- 1 can Beef Broth

1/2 to 3/4 cup water
Cook meat, drain well and add taco seasoning. Cook 5 minutes and add remaining ingredients. Don’t drain cans. Let simmer 30-45 minutes for flavors to mingle.
Serve topped with shredded OkieSpice Extreme Jalapeño Cheese and crushed Tostitos.
