Fat Tuesday Beans & Rice

                                Kim'Z Red Beans & Rice

 

1 Smoked Ham Hock

1# Dried Red Beans, rinsed

2 Tbsp Bacon Fat or oil

1# OkieSpice Andouille Sausage, loosely diced

1 onion, chopped

3/4 cup chopped celery

3/4 cup chopped red or green bell pepper

( poblano or sweet aji works great too!)

4 cloves garlic, chopped

8 cups Chicken Stock

1 Tsp OkieSpice Cajun Hot Heat Rub Seasoning

2 Tsp OkieSpice Creole Seasoning

1/4 tsp OkieSpice Ground Thyme

1 Tsp OkieSpice Hickory Smoked Sea Salt

1 Tsp OkieSpice Smoked Black Pepper

 

Preheat oven to 250 degrees. Using a large Dutch Oven, sauté veggies in oil over high heat for a couple minutes. Add sausage and cook for 10 minutes or so. Add the remaining ingredients and cover with lid. Place in oven and forget about it for 2 hours. Then stir (if you want to) , turn oven down to 225 and let it go another 3 or 4 hours, stir again at 3 hours.....if beans are tender it’s ready!

Serve over cooked rice(Zatarains white rice is the best!)

We use Cindy’s Cin-fully Hot Cayenne Sauce for added heat.
