One year for Steve’s birthday I got to thinking......I had never made him my special chocolate cherry cake. It’s an old standby that I have modified over the years.......adding more of this and that.....and now with the spice store.....I knew the perfect ingredient was going to be the Black Onyx Cocoa! Also knowing the way Steve loves sweets......I knew this was going to be a new favorite! Just don’t tell my mom I used a cake mix!        

            
                                     
Chocolate Cherry Cake

*Triple choc fudge cake mix

*6 Tbsp Black Onyx cocoa

*1 can cherry pie filling

*3 eggs

*2 tsp Mexican Vanilla Paste

*1 tsp almond extract

*1/4 cup Real Coke

*1/8 cup maraschino cherry juice

 

Mix cake mix with cocoa. Add cherry pie filling and remaining ingredients. Stir well.

Pour into 9 x 13 cake pan.

Bake in preheated oven at 350 for 40 minutes.

 

                                 Fudge Icing

*4 Tbsp butter

*3 Tbsp Black Onyx cocoa

*3/4 cup evaporated milk

*1 1/2 cups semi-sweet choc chips

*1/2 tsp Mexican Vanilla Paste

*4 cups powdered sugar (plus more of needed....)

*3 Tbsp Real Coke

*2 Tbsp Maraschino Cherry Juice

 

Melt butter in medium pan over low heat and stir in cocoa.

Add 3/4 cup evaporated milk. Continue stirring over low heat for another 5 minutes.  Add 1 1/2 cups choc chips. Stir over low heat for 3 or 4 minutes, until chips are completely melted. Remove from heat. Gradually add 4 cups powdered sugar......mix till smooth. Add coke and cherry juice. Mix well. (If needed, add extra powdered sugar, 2 Tbsp at a time....until nice and thick.) Pour/ spread over cake while both are still a little warm.
