OkieSpice Stuffed Poblanos

                              Chorizo Stuffed Poblano Peppers
6 Large Poblano Peppers
#1 Chorizo, (or Ground Beef)
1/2 onion, chopped
3 Garlic cloves, minced
1 1/2 Tsp OkieSpice New Mexico Chile Powder
1 Tsp Cumin
1 Tsp Salt
1/2 Tsp Black Pepper 
1 cup cooked white rice
1 cup Frozen Corn, thawed & drained
1 cup Black Beans, drained
1 16 oz can Fire Roasted Diced Tomatoes 
1 1/2 cups shredded Cheddar Jack Cheese
Preheat oven to 375 degrees.
Cut a small slice off top of peppers, lengthwise. 
Remove seeds.
Place on baking sheet and roast for 15 minutes.
Turn over to let moisture sweat out & let cool slightly.
While roasting peppers, cook chorizo , onions & garlic.
Add spices and saute a bit.
Add corn, beans, tomatoes & cooked rice. 
Cover & simmer on low 10 minutes.
Add 1 cup of cheese- stir till
melted.
Stuff peppers and top with 1/2 cup cheese. 
Bake for 25 minutes. Enjoy!
