Tequila Lime Marinade
Our #cooksnotchefs is our way of saying......we just like to have fun cooking and creating! We don’t claim to know everything and we are certainly not experts at this “hobby” we have turned into “work”, but you can be certain we have tried (and tasted) everything we share with you! If it wasn’t a hit with us, we wouldn’t carry it at OkieSpice, nor would we share our creations for you to try at home! This marinade is amazing for any type of beef or chicken , esp if you are grilling up fajitas!
1/2 cup tequila
3/4 cup dry white wine
Grated zest and juice of 2 limes
1/4 cup fresh cilantro(1/8 cup dried)
1 tsp smoked sea salt
1 Tbsp cracked black peppercorns
1/3 cup canola oil
Simmer tequila till reduced by 1/3. Let cool then combine all but oil in blender. While running, drizzle oil a bit at a time till mixed. Marinate chicken 2-4 hours. Beef or pork 4-6 hours.
After removing meat from marinade, use your choice of dry rub ( OkieSpice Fajita Seasoning preferably) before grilling.
