OkieSpice Lasagna Soup

#1 Italian Sausage
#1/2 Hot Pork Sausage
1 onion, chopped
8 Garlic Cloves, minced
3 Tsp Dried Basil
3 Tsp Cracked Fennel
2 Tsp Mediterranean Oregano
1 Tsp Dried Thyme 
1Tsp Dried Parsley
1/2 Tsp Dried Rosemary
1 Tsp Garlic Shot
1/2 Tsp Black Pepper
1 Tsp Mushroom Powder
1 Tsp Crushed Red Pepper
1 Whole Bay Leaf
1 can Fire Roasted Tomatoes 
1 can Crushed Tomatoes 
3 Tbsp Sun Dried Tomato Paste
6 cups Low Sodium Chicken Broth 
8 Lasagna Noodles, broken into small pieces
Parmesan Cheese
Fresh Mozzarella Pearls
Cook sausage, onions & garlic
until browned. (No need to drain) 
Add dried spices and saute  into meat mixture for about 5 minutes , stirring occasionally. 
Add tomatoes & broth-bring to a boil….then add broken noodles.
Simmer on low for 20 minutes or until noodles are al dente. 
Turn off heat & let set 10 minutes.
Remove Bay Leaf.
Stir in 1/4 cup Grated Parmesan to soup.
Top each individual portion with several Fresh Mozzarella Pearls.
(Some folks add a dollop of Ricotta Cheese to each serving but we greatly prefer the mozzarella pearls. So Much Better!) 
It’s important to use Low Sodium Chicken Broth or you will be up all night sucking water!
