RSS
                               Slow Roasted Carnitas
3 or 4 lb Pork Roast
Olive Oil
5 garlic cloves
1/2 white onion, chunked
1/2 cup Orange Juice
1/2 cup Chicken Broth
1 Tbsp OkieSpice Garlic Shot
1/2 Tsp OkieSpice Smoked Paprika
1/2 Tsp OkieSpice Cumin
1 Tsp OkieSpice Applewood Smoked Sea Salt
1 Tsp OkieSpice Smoked Black Pepper
Carnitas Simmer Sauce
Salsa, cilantro, chopped onions, cheese
Flour or Corn Tortillas
Brown Pork Roast in a little olive oil on both sides in a 5 quart Dutch Oven or slow cooker. (If using oven, preheat to 250 degrees). Add garlic cloves & onion chunks to pan. Sprinkle seasonings over both sides of roast after a bit. Continue to brown for 5 minutes. Pour juice and broth over roast and place in oven for about 4 hours. If using slow cooker, set it on low for 8 hours.
When pork is cooked and tender, remove most of the juice and shred meat. Add about a 1/2 cup of juice back into pan along with 1/2 cup of carnitas simmer sauce. Add extra sauce according to taste. At that point you’re ready to heat up tortillas for carnitas or make up a big ol plate of nachos......just don’t forget the OkieSpice Jalapeño Extreme Cheese!
