OkieSpice Chili Rice Dinner

 

#2 Gr Chuck

1 Lg onion, finely chopped

3 Tbsp New Mexico Chile Powder(Ancho Chile Powder works too!)

1 Tbsp Smoked Paprika

1 Tsp OkieSpice Garlic Shot

1/2 Tsp Black Pepper

1 Tsp Dry Mustard

2 Lg Poblanos, chopped -1 1/2 cups total-

(or Green Bell Peppers)

16 oz Frozen Whole Kernel Corn

23 ounces Tomato Sauce(1 Lg & 1 Sm Can)

3/4 cup water

1 1/2 cups Minute Rice

1 cup Shredded Mexican Blend Cheese

 

Brown beef with onion.

Drain beef and add dry spices.

Let cook for a few minutes, stirring frequently.

Add everything but Rice & cheese. Bring to a simmer while covered for 5 minutes & then stir in uncooked rice.

Cover/simmer on low heat another 5 minutes.

Stir/adjust seasonings, if needed. Turn off heat when rice is tender & top with cheese.

Cover pan until cheese is melted.

 

If using Bell Peppers instead of Poblanos- sometimes we dice up a few jalapeños for more heat & flavor.
